Those arriving in Emilia for the first time may find it difficult to order filled pasta at a restaurant. Cities that are just a few kilometres away have different ways to define the characteristic hat shape.
Everyone has their own story, recipe, tips, secret ingredients and superstitions handed down from mother to daughter to grandchild. We all have our own childhood memories linked to anecdotes to tell around the table to have a laugh.
So, you can call them Cappelletti or Tortellini but the result won’t change. They are excellent in broth, as per tradition, or casseroled, with meat ragù or just melted butter and Parmigiano.
ANOLINI
What does Christmas smell like? For you it might smell like snow, for another person, like hot chocolate or the warm embers in the fireplace.
For us in Emilia, Christmas smells like a plate of Anolini in broth. Grandma’s anolini, those that every grandchild tries to imitate. The ones you eat only once a year, but you make so many of them that you can eat them until 1 January.
And what if there’s no more broth? Butter and Parmigiano come to the rescue. Our anolini are handmade with the same care, patience and love of our grandmothers. Because every day can be festive. -
